Dankzij 6 maanden houtrijping heeft de wijn structuur en complexiteit.De druiven komen uit het Salice Salentino gebied, gelegen in de provincies Brindisi en Lecce. De bodem is zeer rood en rijk aan ijzeroxiden, met een laag kalksteen eronder. De wind waait hier altijd en brengt de zeelucht in de wijngaarden. Warme dagen en koude nachten geven de wijn een bijzondere complexiteit.
